Mor Kuzhambu / Buttermilk Kuzhambu

         Mor Kulambu is a traditional recipe which is prepared using yogurt / curd.  It is famous in the state of Kerala and Tamil Nadu.  We add vegetables to make this curry, such as cucumber, pumpkin.  Usually , in South India Mor kuzhambu is used to make with the help of lady's finger (vendakkai).  The main ingredient to make Mor kuzhambu is buttermilk and coconut

    Note:

  • use sour buttermilk for tangy taste.
  • If you don't have sour curd then you may add 1 - 2 tsp of lemon juice in it.
  • always cook the curry in low flame.    
  • Use of Coconut Oil give taste.
  • If you want to add Lady's finger or any vegetable, add them before adding the paste.

Ingredients :

  • 2 Cup of Buttermilk
  • Grated coconut - 1/2 cup
  • Raw rice - 1 tbsp
  • Green Chilli - 5 numbers
  • Red Chilli - 3 numbers
  • Ginger - small piece
  • Cumin Seeds 2 tbsp
  • Dhoor dhal - 1 tbsp
  • Coriander Seeds - 2 tbsp
  • Turmeric Powder - 1tsp
  • Oil - 2 tbsp
  • Mustard Seed - 1tsp
  • Salt Required

Grinding  Process :

               Take 1 tbsp of Raw Rice, 1 tbsp of Cumin Seeds, 1 tbsp of Dhoor Dhal, and 2 tbsp of Coriander Seeds  Soak all together for 2 hours.

                Grind Soaked Ingredients with 1/2 cup of Coconut, One piece of Ginger, 1 tbsp of Turmeric Powder, 5 Green Chilli make it all ingredient as a fine paste.


Preparation Process :

                Take a pan and pour 2 tbsp of Oil and add 1 tsp of Mustard Seeds , 1/4 tsp of Cumin Seeds, add 3 Red Chilli then  add the fine paste which is Grind.  After 5 minutes  add 2 cup of Buttermilk and leave it for 3- 4 minutes. Switch off the flame before boil. 

Now Mor Kulambu is ready to serve.  Garnishing  with it in coriander leaves.
